Gianni Frasi, an esoteric and visionary roaster, takes his first steps from a small artisan workshop located in Verona, his hometown. The laboratory was renamed Jamaica coffee, where the machinery dates back to the 1950s, the daughter of a tradition inherited from uncle Giovanni Erbisti, who started the business in 1947.
He, in his laboratory, welcomed only those who wanted to understand his work, to know a supply chain that ends in roasting, but must be investigated at the origins, being aware of the origin of the beans and how the work is done in the plantation. He had traveled to see them with his own eyes, from Peru to the Amazon, from Haiti to Sarawak, to grasp the disparities and choose those who work with quality. Perfectionist and curator of the smallest details, he is a pure researcher of excellence. Quality without ifs and buts. Its coffees are controlled by the single plant and its relationship with producers and suppliers is manic.
The roasting process takes place over a direct flame, with timing that change with each bag of coffee: a process whose margin of error is minimal, from one to three seconds. This process distinguishes its production from the majority of roasters, who use indirect flame. In this way the man was distinguished by the strong intellectual honesty, who said “Coffee is not comforting. It does not attract: it is bitter. Coffee is for free men, the luxury product par excellence “.
